Bell Pepper-Tomato Salad
2 Tbsp EVOO 1/4 cup parsley, chopped
1 tsp hot sauce 1/2 tsp Kosher salt
Juice of 1/2 lemon freshly ground pepper
1 garlic clove, grated 2 green bell peppers
3 plum tomatoes
Whisk the olive oil, hot sauce, lemon juice, garlic, parsley,and salt in a bowl; season with pepper. Thinly slice the bell peppers and cut the tomatoes into wedges; toss with the dressing.
